The palate is sweet, clear, bright and vividly rich with rounded but precise fruit. Wonderfully clean, with a slightly richer fruit appeal, there's utter juiciness and mid-weight on the palate. Lush and round on the palate, this is a crystalline, saline and highly stimulating Kabinett with great finesse and elegance and a mouth-watering finish. A kick of tartness adds stunning raciness and elegance to the hugely intense finish. Despite the intensity, the wine remains incredibly Kabinett-styled in its structure and finesse. Seit Jahren träumen wir von einer derartigen Variante und mit dem Jahrgang 2022 Jahr hat Christoph Schaefer erstmals einen Kabinett zur Versteigerung angestellt, der sogleich zum unentbehrlichen Highlight der Auktionen mutiert ist. Wer Christoph kennt, weiß auch, dass der Winzer damit nicht dem allgemeinem Trend folgt. Es hat sich schlichtweg erst kürzlich ergeben, dass ein Fuder derartig als Kabinett hervorstach. Dass sich die Familie damit völlig übertraf und einen der wohl besten Weine der Gutsgeschichte einfuhr, stimmt uns mehr als freudig. Es gibt wenig sympathischere und bescheidenere Familienbetriebe. Zu Recht steht bei den Schaefers stets die ganze Kollektion im Glanzlicht. Das Lagerpotenzial des Domprobsts ist enorm! 900 Flaschen hat Christoph für die Versteigerung angestellt sowie 65 Magnum-Formate. Damit will er auch Preis-Spekulationen entgegensteuern. Es könnte einer der begehrtesten Weine werden, denn Kabinett und Willi Schaefer – das sind zwei Seiten einer Medaille! Wir raten aufgrund der emotionalen Begehrlichkeiten, die dieser Wein auslösen wird und den daher nur schwer abschätzbaren Steigpreisen erneut, sich ganz auf das eigene Gefühl zu verlassen!
